Taste the variety of dishes with traditional recipes inspired from the Tatarstan Republic with a Californian twist.
New flavors in the city never seen, starting for where we source our milk to make our own butter used in our drinks.
Named after the first baker recorded making a croissant in Paris in 1838 a unique bread do to the combination of dough and lamination. it all starts with the Regaliki dough and the addition of lamination of grass fed butter.
MENU
Soups -Bone broth: 72hr chicken bone broth. -Abika noodle soup: home made egg noodle served with our bone broth. -Borscht: beef, beet, cabbage, carrot, onion, garlic, Bone broth micro cilantro.
Market Salad -green salad with seasonal vegetables and protein sea buckthorn vinaigrette.
Main dishes -Cutlet: Beef patties served with mash potatoes, home made sourkraut and mushroom gravy. -Qistiby: Buttered flat bread filled with mashpotatoes, caramelized onion and/or slow braized beef served with cream and herbs -Peremech: Beef patties wrapped in dough pan fried in beef Tallow. Mushrrom version pan freid in avocado oil.
Specialty coffee -Butter coffee: Grass fed butter emulsified in a double shot. - whipped affogato: Frozen whipped cream served with a double shot. -Fermented cold brew -Spiced cold brew: Coffee brewed with our home spice blend. -Hot kokolet: As Ayla says Kokolet is the way to go. -Citrus dark coffee: Brewed with the perfect blend of citrus.
Breads and sweets -Butter Zang -Sugar Zang: The perfect amount of sugar and butter combined with textures. -Morning Zang: A mix of pine nuts, cashews and walnuts baked inside with a caramel and nut topping. -Dea Zang: Our version of a buttery mokey bread. -AyDea Cookie: Liliya's cookies baked on top of Dea Zang. -Chak Chak: Egg noodle deep fried in avocado oil bathed in honey syrup. -Liliya's cookies: Brown butter, dark chocolate, maldon salt Tatar cookie. -Blinchiki: filled with sauteed fruit in butter with fennel polen, cinnamon, vanilla and mixed with farmers cheese. -Seasonal jam
Baked goods -Beef Uchpuchmak: A staple in Tatarstan Contrary to most beef pies all meet gets cooked previews to filling the dough. We cook everthing in it and it gives the best flavors to the dough and the filling (beef, potato, onion) served with our 72hr bone broth.
Breakfast -Zang Monsieur: Zang bun, veil kalbaza, house sauces, Tatar cheese herbs. -Zang Madame: Zang bun, veil kalbaza, house sauce, Tatar cheese, sunny side up egg, herbs. -Egg Sandwich: Tatar cheese, scrambled egg, arugula and pickled onion. -Tsar scrambeld: custardy scrambled egg finished with herbs and served with a butter Zang. -Liliya's pancakes: Perfect combination of Tatar and western pancakes served with honey or mapple syrup.
Drinks -Tatar chai: Combination of fresh herbs and dry leaf tea mix Like in Datcha. -Sea buckthorn tea: made with actual fruit. -Sea buckthorn water: Made with actual fruit and sweetened with honey. -Ivan chai -Kompote -Kvas 500ml -Karkade basil water -Assortment of fresh herb teas
